Ingredients for making cassava coxinha with shrimp and catupiry:

For mass:

 2 cups of wheat flour (280 grams)

 300 grams of mashed cassava

 300 milliliters of milk (1¼ cups)

 200 milliliters of shrimp broth

 2 tablespoons unsalted butter

 salt

For the filling:

 500 grams of unpeeled shrimp

 150 grams of creamy cream cheese Catupiry

 2 garlic cloves

 2 tablespoons of butter

 chopped parsley

 Black pepper

 salt

For breading and frying:

 2 units of beaten egg

 200 grams of breadcrumbs

 frying oil

How to make cassava drumstick with shrimp and catupiry:

To prepare this delicious shrimp drumstick and creamy cream cheese, start by peeling the shrimp. Cook the heads, skins and a little parsley in a pan over medium heat with water for 10-20 minutes. This is the preparation of the shrimp broth.

While the broth cooks, place the butter and garlic in a skillet over medium heat. Let it fry for a few seconds, stirring so that it doesn't burn, and add the shrimp core. Season with salt and pepper, sauté until colored, then turn off.

Finish preparing the stuffing of the catupiry shrimp drumstick: when the shrimp is warm, mix it with the Catupiry and chopped parsley to taste. Check the flavor with salt and pepper and set aside.

At this point the shrimp broth should be ready. Add milk and butter to it and bring to a boil. Then add the manioc puree and the flour little by little, while stirring, in order to obtain a smooth, lump-free dough. Adjust the salt, mix and turn off the heat.

Transfer the cassava coxinha dough to a smooth, floured surface, open and let it cool. When it is warm, knead and knead so that it is very smooth, take it in pieces, fill it and close it in the shape of a drumstick.

Tip: If the dough is thin, keep it in the fridge for 10-15 minutes.

Finish preparing the coxinhas: pass each one through a bowl with beaten egg and then fold in the breadcrumbs. Place frying in hot oil until golden.
